Opening Email

When I used to open an email it would take a double click. I do use the
preview pane on the right side of my screen. Now when I simply click the new
email to preview, it opens the entire email with a single-click. I also
installed a new mouse but am not sure what the problem is... Any ideas?

In your mouse configuration screen set it to double click opens an item
instead of single click.
There is also a Windows setting for this;
Control Panel-> Folder Options-> tab General-> Double click to open an item

There is no specific Outlook option for this.
