One last 2000 server

I have recently added a Windows 2003 DC to my Win2000 domain. My Win2000
domain now has 2 Win2000 DCs, 1 Win2003 DC, many Win2000 Pro workstations,
and a few WinXP workstations. All of my DCs are in one site within ADSS,
host DNS services, and all are Global Catalog servers. One of my Win2000
DCs host all 5 FSMO roles.

Goal:
I want to convert the remaining two Win2000 DCs to Win2003 DCs.

Questions:
1. Are there any concerns about doing this conversion? I want to make sure
that all of my configurations, such as group policy settings, Active
Directory settings, etc. will still apply correctly to all clients after the
conversion. I don't want to be blindsided by something I forgot or didn't
do.

2. When I do the conversion, I had planned on demoting one of the two
remaining Win2000 DCs, format its drive, install a fresh copy of Win2003,
and then promote it to a DC. Once that is complete, I will transfer the 5
FSMO roles from the remaining Win2000 DC to a Win2003 DC. Then I will
demote the last Win2000 DC, format its drive, install a fresh copy of
Win2003, and then promote it to a DC. Will this work? Am I missing
anything?

Basically I want to make sure everything goes smooth.

Sounds pretty good, but you may want to look at the following article which
covers pertty much all the bases. Just be sure that after the demotions etc
that has replicated to all dc's before re-introducing the new ones,
especially if using the same names.
