Is there a way to stop offline files from synchronizing on
log off ? This option is grayed out under folder options
so I immagine that this is something that will need to be
changed in the registry.

This may be set by domain group policy... Try running "gpedit.msc" to
see what your local Offline Files policies are (under Administrative
Tools)
