Office Apps

I understand that it's perhaps not ideal to install Office apps on an
embedded system. Are there any scaled down versions of Word and Excel that
are built for XP embedded?

You may want to try 3rd party solutions like SoftMaker software or AbiSource/AbiWord, e.g. (http://www.abisource.com). It is good
alternative and technically easy to archive.

I understand third party software is ideal in this environment, and the
AbiWord app looks slick. However, assume I'm trying to offer an XP embedded
platform to an office of 500 employees that use the MS Office suite. My
preference is for them to continue using the MS Office apps they've already
paid for.

Because of some legal restrictions you won't be able to use MS Office applications with XP Embedded.
