Says Hibernate's been replaced with Sleep.

Well, can I get Hibernate back on the shutdown menu?

How to make the shutdown default be Turn Off vice Sleep.

I selected sleep, the screen went immediately blank, but after 1 sec, came
back on and stayed on, so I'm presuming this desktop did not sleep.

Dig deep down into advanced power settings and you can disable "hybrid
sleep", which will then enable your selection of either sleep (standby) or
real hibernation.

Also, in advanced power settings you can change the action of the power off
button on the start menu.
