How do I get rid of an option in the New menu when I right
click on the desktop? Any suggestions would be helpful!

That is per user based and is stored in

HKEY_CURRENT_USER\Software\Microsoft\Windows\CurrentVersion\Explorer
\Discardable\PostSetup\ShellNew
