necessary start up

I'm told that I have to many things running in the back ground and that
I should uncheck some programs in the msconfig start up. My question is
what do I have to have checked for it to work properly?

I have 60+ processes running, and with 1GB on one machine and 2GB of
RAM on the other, I don't notice any performance hit. How many
