multiple exchange profiles

Hi there, I have two exchange profiles on different domains. Is there a way
that I can setup Outlook 2003 to work with these two exchange profiles
simultaneously? So essentially I can either view all my mail in one inbox?
What can and cant be done with two profiles?

You could access one of the Exchange servers normally and the other via an
IMAP account. That would work in a single mail profile.

Would I be losing access to anyparticular features? If not, what is the best
way to set it up, just create a normal IMAP account instead of an exchange
profile?

All folders would appear as mail folders in the second mailbox, including
contacts, calendar, and so on.

There's no "instead". Accounts and profiles are no equivalent. You add the
IMAP account to the same profile where you have the first Exchange account.
