MS - editing Outlook

I'm running Outlook 2003
We have a SBS 2003 server running Exchange

When I reply or forward an email; and want to edit it, it gets all
distorted. It puts in extra spaces, it indents and changes font colors.
If I copy and past it into a new email the spacing becomes completely
different.

Anything I can do to change this?

Tools->Options->email options.
