Markup Colors

If I set my Markup options to None, will I still have changes tracked in my
document? For example if I change Insertions to None, Deletions to None, etc.

Yes. When you change the markup colors, they will become visible.

Yes, the changes will be tracked. The markup options control only how
they're displayed.

If you track changes with all the options set to None, and then later
change the options to colors and other formatting, they'll magically
appear. Even when the options are still set to None, if you send the
document to someone else, they can still see the changes.

The only way to get rid of the changes for good is to accept or reject
each one (or all at once).
