The email addresses you're looking for are saved in a file called "outlook.nk2." You'll have to download a utility program to see the contents of that file. It cannot be opened in Word, Notepad, etc.
On my computer, the file is located here:
C:\Program Files\Microsoft Office\Office12
That file has a limit of 1,000 addresses. Once it reaches that number, it deletes one old address for every new one added.
Just from your inbox and sent folder? there are 2 ways - install an addin that collects them or create a custom view, then copy and paste into excel to sort and remove duplicates. See http://www.slipstick.com/exs/customfields.htm to learn how to expose the from address field. (A third way would be to use VBA to collect them.)
