How do I change the Icon for a jpeg file, the icon I have at the moment is
incorrect and is the icon associated with unknown files.

You should be able to change the default icon via Folder Options, File Types dialog. If that does not help, type REGSVR32 /i SHIMGVW.DLL in Start, Run dialog. Restart Windows.

Another option is to alter the registry:

HKEY CLASSES ROOT\.jpg
Set the value for (default) to jpegfile

HKEY CLASSES ROOT\jpegfile\DefaultIcon
Set the value for (default) to "shimgvw.dll,3" (without " )

In this case, the icon per se has nothing to do with it. You need to
change the file association, which in turn will result in icons for the
program you choose to associate with jpeg files. Right-click on a jpeg
and choose Open With > Choose Program. Click on the program of your
choosing and check "Always choose the selected program to open this kind
of file." If the program you want doesn't appear on the list, use the
Browse button to find it.
