... I would like to delete some styles from my document...

There are five styles in my document that I would like to delete; Heading 1,
Heading 2, Heading 3, Heading 4 and Normal, File Index.

I have deleted several other styles, but these have the delete option
greyed-out. These styles are not in use, and I would like to remove them from
the document.

Is there a way to turn on the delete option for these styles. Or, can I hide
them.

You cannot delete these styles - nor many others (even though Word
pretends). What you can do if you really don't ever want to to see them is
to hide them. In the Styles Task Pane, select Custom from the Show dropdown
at the bottom; then deselect them in the "Styles to be visible" list.
 
Do you mind if I answer my own question.

While in Styles and formatting, at the bottom of the pane, click "Show" and
click "Custom", the top portion of the box allows you to hide or show the
available styles.
