I need to change my inbox color from grey.

Does anyone know how to change the incoming e-mails from grey to black. I
can barely read that I have an e-mail. My tech is even stumped.

See if any automatic formatting rules are being applied in your Inbox folder.
Click Tools | Organize, then when the Organize pane opens, click the Using
Colors tab. Click the Automatic Formatting link in the upper left corner of
the pane and you will see all the color rules being applied to messages.

Everything is still in grey where it normally would be blue or black. I made
the changes as directed and still nothing.

What version of Outlook and do you have the Junk Mail coloring turned on?
