I need a server recommendation and installation guidance

I have an existing server that is too old. I have to upgrade it.

It is Windows 2000 and will stay Windows 2000.

I can find a server from Dell, Gateway or somewhere else.

My main problem is how am I gonna get all the old data on the new
server? I have only done upgrades on existing machines. The old
server has the OS, of course, and I can reinstall all the necessary
ODBC drivers, files, etc., but it has an Exchange Server on it and I
am a little worried. I have no idea how to get that installation on
my new machine. Ideas? How do I get the information store off of one
machine to another?

Oh yes, server recommendation (up to three thousand dollars) is
appreciated also.

Hire someone to install your Exchange Server. He/she will know
how to set up everything, and how to get the data across.
