I cannot get word to save my font changes

I have Word 2007. I have changed the font from Times New Roman to Bembo
(which is not available on my system but it still allows me to use it). I
have closed the document and when I re-open it some sections go back to Times
New Roman and others stay in Bembo. How do I fix this?

Any font that isn't installed will be substituted on your system; what you
can do is install the correct font or pick a substitute font in Word.
 
But she said that _some_ of her Bembo still appears.

I just had a similar problem. I have to change my text font from
Gentium to Times New Roman (because Gentium hasn't yet incorporated
all the phonetic characters), so I Modified my Normal style (on which
almost all the others are based), and the paragraphs obligingly
flipped into TNR -- except that the first several words, or the first
complete line, of some paragraphs didn't switch. (It's not a display
thing, because the old font name still appears in the dropdowns, and
selecting the (un)affected text and changing the font through the
dropdown works.)
