how to keep date on old doc from "updating" every time I open it?

When I open up a document originally made on a certain date, the original
date (on the fax, or in the header, for instance) disappears and today's date
takes it's place. I never want it to do that automatically, and I have to go
in each time and change it back. (Which always takes forever, because I have
to look up how to do that every time.)

How do I set things to stop all my Word documents from EVER doing that
automatically?
