how to change page header/footer for printing a datasheet

How does one change page header/footer info that prints with datasheet view.
The default appears to be the title of the object (which for forms is not
necessarily the name of the form) centered in the header, the print date
aligned right in the header, and the page number centered in the footer.

You don't print forms, you print reports. Build a report and you will have
the control over how it looks on the printed page. Forms are for viewing,
adding, and changing data. Reports are for printing.

If they weren't meant to be printed, then the print command should be
deactivated for that object. I am trying to have my students print their
datasheets so I can verify that they have done their assignment. Printing
the datasheet for their table looks the same for each student, so whoever
figures out how to do the exercise can print multiple copies for their fellow
students who are then able to skip doing some of the work on the assignment.
At this time they have no idea how to create a report. I suppose I could
create a report for them, but that would require additional instructions over
and above those printed in their text and most are unable to process
instructions split between the text and another document.

You are trying to use it for something it was not designed to do.

Possible alternative:
Instead of print it.
Have them go to file - Send to
and sent it to you as a HTML document.

More work on your part but
makes it harder for them to fake it.

Yea, you are right it seems odd. However if it was not there, then
people would be saying, I just want a quick way to print the form.

I suggest you follow the program rather than fighting it. Use a report.
