Assuming your TOC is built on the basis of the paragraph styles applied to
the headings, the answer is to change the style of the undesired heading to
a style that isn't included in the TOC. (Note that the Options button in the
TOC dialog gives you control of which styles are included.) If necessary,
create a new style for this purpose and format it to look like the existing
style.
