How much video to capture?

I'm a new guy at this so fair everything is working, but i was wondering how
much video to capture at one time?parts or all?

I capture the whole tape, then use the clips to edit what I want. Let it run
while you have dinner...

I only capture part of the tape if I know it is just a single short part I
want and I am short on time. You may opt to do this if you are short on disc
space.
