How do I view incoming mail in HTML format?

I have just downloaded SP2 & SP3 and now all of my incoming emails are in
plain text. What has changed and how can I get it back to HTML format?

-type of mail account (POP3, IMAP, Exchange, HTTP, Outlook Connector,
Exchange, other...?)
