How do I turn on the Auto correct option on my outlook?

In my Tools>Options>Mail Format>Editor Options>Proofing>AutoCorrect Options,
the autocorrect and the "Wehn correcting spelling in Outlook" are totally
disabled. They appear in grey color and do not allow me to check or uncheck
anything. Can you help?

Hard to say without any configuration information.
Outlook 2007?
Do you have both Outlook 2007 and Word 2007 installed?
Verify that you have installed Spell and Grammar check.

Don't know what your answer means. I upgraded Outlook to 2007; rest of
"Office" is 2003. Outlook 2003 worked fine. Upgraded Outlook only b/c
employer insisted on it. I don't see the advantages. Operating system just
upgraded from Vista Home to Vista Ultimate because I needed the network
capabilities. Our IT guy couldn't figure it out either.

Some of Outlook 2007's features work only when all of Office versioon 2007.
I think I recall reading that some, at least, of the autocorrect features
aren't available in a mixed Office environment. The Microsoft Office web
site will have the details.
I don't see the advantages.

Many advantanges arise only when all of Office is the same version.
