How do I stop Outlook closing

Whenever I am viewing Outlook but then click on it in the programs open
window in the Taskbar, it closes. How do I stop this occuring?
 
Are you sure that it closes? Isn't there a little Outlook icon in the
systray (notification area on the lower-right of the desktop)?
