I want to keep my perssonal information away from my work PC, which is
connected to the network and using Exchange Server.

I am not sure what you're trying to do (or what you mean by
synchronization). If you don't want any of your personal info on your work
computer, don't use it there at all.

Create a local PST and put your personal information in it.
