How do I move emails after a specified date?

How do I create a rule that will move email messages to a specified folder
after a specified time period? Specifically, I want to organize my boss'
email into folders and after 7 days, any email messages about X will go into
folder X.

have you think about the archive function?

I'm on an Exchange Server, and apparently I can't control auto archiving
because none of the auto archiving features noted in the Outlook
documentation is available in my version of Outlook (2002).
