Double-click the animation in the animation pane and choose Chart
Animation.
There you can select the "grouping".
You don't ungroup the chart. You apply an animation to the chart, then you
set the animation to "by series" or "by element in series" or, in the case
of a pie chart, "by category."
To ungroup a chart you must copy it, paste special as emf, then ungroup the
EMF twice. But honestly, you don't have to ungroup the pie chart in order to
animate it. Try it, you'll see.
