How do I change the setting that forces all email accounts to display as
"Last name, First name" when I write and send emails?

I have a bunch of names that I would like to appear as email addresses when
I send my email.

Email accounts?
Do you mean email addresses?
If so, display where and in what version of Outlook?

I have the same question.

I am referring to changing the display name of email addresses in the
"display as" field for email in the Outlook contact section. You list
someone's email address (Email1, Email2, Email3) and the next field is
"Display As." I'd this field to give the actual email address as entered into
the email address field such as (e-mail address removed). I don't want it to
display John Smith ([email protected]), which seems to be the default that
Outlook uses.

Then reset it manually to what you want.
