I've just installed Nero and now if I want to edit a picture or play a video
it uses the Nero programmes. Anybody know how I can set my computer to
default to the programmes I want to use?

I went to the start-up menu and option defauly programmes but this does show
ie picture editing etc

I use Windows XP

You could uninstall Nero so that Windows goes back to previous defaults
and then reinstall, but PAY ATTENTION to the installation process so
this isn't repeated.

OR
(Since we have no idea what you used before and can't offer more
specific advice.)

You right-click on a file of each file-type, choose Open With .... and
then set that application as the default.

Right click on the picture, click open with, then choose program.
You select program that you want to be default for this kind of files then
click checkbox
Always use selected program to open this kind of file
and click Ok.
I hope this will help.

I presume that you are opening these files by clicking on them.

If that is the case, then Nero hijacked the file associations.
There are several ways to restore the associations which are documented in
Help & Support.
