Go into the e-mail account that you defined and put whatever you want as
your e-mail address. There are mail servers that require the e-mail address
you put in the From header matches to the e-mail address for their account
through which you send your outbound e-mail but those are rare. Even if you
specify a different e-mail address in the From header than for the account
through which you send your outbound e-mail, recipients can still see from
which mail server your e-mail originated; however, your description makes it
appear that just the username would be different and the domain for the
e-mail service you use would remain the same.
You never bothered to mention what type of mail server you use for sending
your outbound e-mails. If using Exchange, it is likely that it doesn't
matter what you specify as your e-mail address. All e-mails sent through
that Exchange account will show the company's defined e-mail address for
that account. They don't want their employees lying about what is their
e-mail address.
