Is there a way to make the hit counter invisible to others and only visible
to us? If not, is there another way to tell how much traffic you've had to
you site?

The web server will actually keep track of every single hit to a page and
all the files used by the page (scripts, images, etc.). Basically, any and
all requests to the web server get stored in plain text log files. You may
check with your host as they may let you have access to the log files, in
which case you can find a program called a log file analyzer to get some
idea of what the site is doing, or they may have a web-based software that
will let you look at your current site log in a meaningful text and
graphical format.
