the 'to' box?

E-mail server deliver messages based on e-mail addresses, not names.
You will have to specify the e-mail address for the recipient(s). The
name is superfluous to e-mail delivery (it is a comment field).

Change the Display As field of the person's contact record to show only the
string you want. (The e-mail address will still be there, but it will not
be visible in the To field.)
