You haven't told us what program you're asking about, or what
options. But in general, options are grayed out because the
choice isn't available; they get restored automatically when the
choice becomes available, and you can't control them manually.
For example, you don't get a "copy" choice in most toolbars until
you've first selected something, so there's something to copy;
you don't get a "paste" choice until you've first cut or copied
something, so there's something to paste; etc.
