Format problem

Outlook 2003 with Word 2003 as text editor.
Mail format is set for Plain Text. Arial selcted as default font.
When the Reply to Button is used the format of the email is the same as that
sent to me. So when I receive an html email the reply is formatted as html.,
not the default Plain Text.
Though the default format for the email font is Arial, the format of the
signaure is irritatingly Times. The default format for word documents has
been set to Arial.
How can I ensure that the signature is the same format as the body of the
email?
How can I ensure that the format of emails is plain text unless I choose to
use html?

Outlook ALWAYS uses the same format in a reply as the original
message. You cannot "automatically" change it.

SgtRich many thanks for your reply. Perhaps I should not have posed the
question "How can I ensure that the format of emails is plain text unless I
choose to use html?" but concentrated on the other question concerning the
fonts.

When you compose a reply, click Format>Plain Text before composing or
sending the reply.

Brian. Many thanks for your suggestion. I already do that but want to avoid
having to do that when sending emails in html format. If the signature
appeared in the default format it would obviate the need to do that.
