How can I make it so that when it comes up it comes up with my chosen
font, rather than Bill Gates' choice of Arial?

The choice has always been yours, not anyone else's. If you're
not even going to bother looking in the obvious places for such
settings, at least look in the help files.

Tools > Options > General > Standard Font.
