You unfortunately did not mention the name of the application that you use
to compose and send mail. Whatever the application is you should try
looking for a setting called wordwrap somewhere in the options. A cruder
fix would just be to hit enter once your line reaches a certain length, thus
forcing a line feed on the recipient's screen.
