email time stamp

Whattime?

I had an argument with a friend about what time he sent
an email (based on the date/time in the header). To check
this out I sent a test email (I live in the eastern time
zone)from my Yahoo acct at 3:09 pm today and rec'd it at
my hotmail acct a few minutes later with a time in the
header listed as 8:09 pm!! Can anyhone explain this?
 
The time stamp comes from the email server. Either it's in a different time
zone or the time on it is wrong or it doesn't adjust for time zones, could
be GMT time.

To purplehaz--I didn't think of GMT as the answer. 5 hrs
ahead of EST is GMT. Thanks for the help.
