how can I stop email addresses from appearing in the to line of my messages.
I only want the name to appear

You can't.
 
If you send the E-Mail to yourself on the to line,
Then add the other addresses on the BCC (Blind Carbon Copy) line.
No one can see addresses when you send them out.
