E-mail signature changes

I have setup e-mail signatures for Outlook, using Word 2000 as my editor.
Everything works fine for original messges. However, sometimes on replies or
forwards, usually with e-mails that originate outside the company, when doing
the reply the font for the email signature changes to match the originating
message. Is there a way to prevent this?

are the original messages in Plain Text? In that case, when you reply or
forward, the message stays in plain text format and the font is the same
