cutting a long story short, is it possible to create a system that
dual boots two installations of XP?

ie at boot the option exists to boot to WinXP instance #1, or to WinXP
instance #2

???????

Yes. Install the second copy of XP on a different partition. When you
install the setup program will detect the first installation and
automatically create a boot menu for the two installations.

Hi, I did this by accident, and now need to undo it.. hehe I posted my own
problem, but I can certainly help you create one!

Install the new hard drive or create the new partition on the old drive.

Insert your XP CD and allow it to autorun. Run through the options to
'Install Windows XP'.
Select 'New Installation' from the drop down on the next menu.
Add License Key info
On this part, I don't remember exactly, so you'll need to look for it, but
under an Advanced option, you need to select something like 'I want to select
the drive to install to', and then your computer will re-boot into XP Setup.
This will all look like a normal XP install. Select the new drive or
partition and let XP install. When you're through, you will end up with a
dual boot option on the old drive. You can Edit the boot.ini file on the old
drive and give unique identifiers to the Dual Boot select screen.
