How in the #@$% do you run the exchange calendar update tool I have ran it
successfully on one of my exchange servers at least it says it was successful
but still all my users appointments are still off by an hour what gives?

The order of sequence of updates is really important. First you should update
the workstation O/S's, then server O/S's, then Exchange DST update, then run
either the Calendar tool against any affected users OR use the TZMove patch
for them.

I meant to ask is there a way to fix the issue now that the updates have been
run in the wrong sequence?

To be honest, I don't know. You could try to roll back the patches and
rebase. If there is a method I haven't read up on yet or don't know about,
someone else will come along and post.

I would also like to know if there is a way to 'undo' this fix. The fix was
applied, however now the appointments are an hour off, where they were fine
before the fix.
