Document Properties is greyed out

I am using a fax template I received from our head office & the "Document
Properties" option is greyed out on the Insert, Quick Parts list of options.
The template doesn't seem to be locked or protected in any other way.

I recently upgraded to Office 2007 from 2003 & so far it's been a constant
source of frustation trying to find where previous options have gone. Any
pointers to a comprehensive, but concise, guide would also be much
appreciated.

Insert | Quick Parts | Document Property requires the new file format of Word
2007. To insert properties as in previous versions of Word, use Insert |
Quick Parts | Field instead.
