Display only the contact's name in the "to" field

How can I display only the contact's name when I address an email.
Currently, both the contact's name and email address is being displayed. I
want to eliminate the email address.

Windows Mail does not allow you to alter what you see on your end.
Depending on the mail client, the recipient will typically see only
the name, not the email address.
Incidentally, Windows Live Mail only shows the contact's name.
