How do I access my personal contacts folder instead of the default contacts
folder when I reply, forward, or create mail?
How do I eliminate the email address from showing on outgoing messages in
"to" or "cc" field?

1. By default, Vista has only one Contacts folder, so it isn't clear why you
are distinguishing between 'personal' and 'default' contacts.

2. What you see is what you get. The newer Windows Live Mail (to which
you are welcome to upgrade), shows only the names, unless the contact
has multiple email addresses.
