I have a database that has several numeric consecutive
fields. If I enter a 1 in the first field and a 2 in the
second, Access automatically enters a 3 in the next field
(if the field was previously empty. If I enter a 2 in the
first field and a 4 in the second, Access enters a 6 in
the third. Is there a way to disable this AutoFill
function?

It doesn't appear so:

ACC2000: Tables Are Automatically Populated with Values As You Move Through Fields or Records
http://support.microsoft.com/?id=271607

includes the following:

MORE INFORMATION
Microsoft Access 2000 includes a new feature that is named AutoFill. This feature is built into
Access, and it is always enabled. You cannot disable it.

Numeric fields with a default value specified will not be subject to Autofill.

Annoyingly, no. This misfeature was evidently introduced by someone at
Microsoft who wasn't clear on the difference between a spreadsheet and
a database, and incredibly, it hasn't been fixed in three versions.

However, it does NOT infect forms; it's just one more reason to
abandon use of table datasheets for any purpose other than debugging,
and do your data entry on a Single or Continuous Form. The latter can
be made to look like a datasheet if that's an appearance you prefer.
