Assigning values to text for calculation

Dear all
I am a beginner to Access. I am creating a database to store patient information for audit purposes. I have a table which has about 5 fields with text values entered by look up wizard. The reason it is text is purely for the user to select this text rather than numbers in the forms I am creating. Now the problem is I have to calculate the score based on the text values. For example the first field contains 3 look up text options (text1, text2, text3). In actual clinical practice, the text1=0 , text2=1 and text3=2. After entering all the 5 fields, I need to add up all the fields value to come to a score.

I was wondering if either I can store numerical values in table and convert them to text to show them in forms or assign a numerical value to the text values for calculation purpose.
