Deleted mail

I use Outlook at work. When I delete mail, it goes to the Deleted Mail
folder. Whereas on my laptop at home, I have Windows Mail. When I delete an
email, it's gone! I like to be able to look back on deleted emails for one
reason or another. Is there a way to save deleted mail?

Yes, it should do that by default.
Check to see if something's been changed..
Tools - Options - Advanced - Maintenance
uncheck [ ] Empty deleted messages from the 'Deleted Items' folder on exit

The only other thing I can think of, is to check your View setting.
Go to the Deleted Items folder, then
View - Current View - Show all messages

In Windows Mail, click on Deleted Items, then View, then Current View,
then Show All Messages. Does this make any more messages show?

It is set to Show All Messages and it's empty: 'There are no items in this
view'
