Deleating files for good

How can I make sure files I delete are gone completely? I tried a undelete program and it found some deleted files.

When you delete a file, it is not removed from the hard drive, the space
that the file occupied is simply marked as available. The deleted file or
remnants of the file will remain until other files overwrite that space.
There are software applications available that can overwrite hard drive
sectors, as files are deleted.
