I have created an IMAP for my Google Mail account, and it is shown as a
sub-folder, not the default 'Inbox', but when I go to 'Email Accounts' and
try and select my only account, my Google Mail account, as my default, the
'Set As Default' box is greyed out...

Can I resolve this issue?

IMAP accounts always have their own folder set because it is required by the
protocol.

I know, but I would like a notification box to display on my desktop when a
new email arrives, and they only for default accounts, so is there anyway I
can make the IMAP account a default?

No, not the folder set; just the account.
You can create a notification by using rules.
