Default Message Form Corrupt

When I create a new message, my auto signature appears different than the way
it is entered under Tools/Options/Mail Format/Signature. The paragraph
spacing has changed to double. Also, when I enter text in the body of
message, the font color has changed to a light yellow and I have a grid
stationery style. When I confirm these settings it is the way I want it -- no
grid, auto font color (black), and auto signature single spaced.

How do I fix this problem?

A few questions:
What version of Outlook are you using?
Are you composing messages in .html or .rtf?
