I deactivated the select user screen after I have been inactive, so when I
come back I don't need to select a user again. I would like to undo this and
allow for the user screen to be shown after inactivity. Where was this
option?

Prompt for password:
.... Click Start > Run
.... Type powercfg.cpl
.... Advanced tab > Tick "Prompt for password....."

If you are referring to when a screensaver is running, then right-click the Desktop,
click Properties from the menu that appears, then the Screensaver tab. Put a check
in the box for "On resume, show Welcome screen" or On resume, password protect"
(whichever is there), and click OK.

If you mean when you come out of Standby, then right-click the Desktop, click
Properties from the menu that appears, then the Screensaver tab, then Power button.
On the Advanced tab, put a check in the box for "Prompt for password when computer
resumes from standby" and click OK all the way out.
